SAUDI ARABIA- Fine-dining restaurant Zilos Jeddah has launched a new Italian-inspired menu created by the recently appointed executive chef Santanu Brahmachary. 

The new menu features Italian dishes and culinary staples like Macaroni Al forno, Spaghetti Cacio e pepe, and Linguine Lobster. 

According to Brahmachary, the menu highlights include the Rigatoni e Tartufo—rigatoni pasta with truffles—and the Orecchiette ca Muddica, which has toasted breadcrumbs for added texture. 

The chef has also included Middle Eastern elements into the menu, such as the Zilos Hummus and Frittata Maccheron. This fusion of regional and Italian staples is meant to provide guests with a unique dining experience.

The newly appointed chef revealed each dish will be prepared from scratch, using fresh ingredients with a priority given to local producers and suppliers. 

Brahmachary revealed he created the new menu because of his vast experience in authentic Italian cuisine. He reiterated that he combined innovative and Italian dishes to provide an alternative dining experience. 

The new menu was announced barely a week after his formal appointment to the fine dining restaurant. He boasts of an impressive 19-year career, where he has honed his skills across various culinary facets like global cuisine, fine dining and banquet catering.  

His extensive background includes leading operations of five food service outlets in the Maldives, where he successfully provided catering services to more than 1,000 guests daily, leading a team of 132 chefs.  

Brahmachary has also held leadership roles in luxury resorts, pre-opening ventures and fine dining restaurants across the Middle east and India. His culinary expertise spans fine dining to all-day dining operations, albeit with a focus on modern cuisine trends.  

According to Zilos Jeddah’s management, this experience has equipped Brahmachary with the necessary skills to manage large-scale culinary operations while maintaining high standards of quality

Reacting to his appointment, Brahmachary reiterated he intends to introduce innovative dishes to the restaurant and Jeddah as a whole.  

The chef leads a diverse team of 35 chefs from all over the world, guiding them on techniques, processes and standards of each dish. In the new menu.
