Crazy Bear Hotel to open BEAR by Carlo Scotto in 2025

UK – Luxury hotel brand Crazy Bear Hotel, located in Beaconsfield, Buckinghamshire, UK has announced plans to open a new restaurant BEAR by Carlo Scotto in Spring 2025.

A new chef’s table concept, BEAR by Carlo Scotto, is set to debut around March, highlighting an open kitchen and counter dining experience.

The menu will embrace a farm-to-plate approach, featuring foraged ingredients and seasonal produce, with dishes influenced by Nordic, Asian, and Arabic cuisines. 

Chef Carlo Scotto, known for over 20 years of culinary expertise in Paris, Tokyo, and New York, previously launched Xier in Marylebone, London, in 2018. Despite its success, Xier closed in late 2020 due to the pandemic.

Scotto later opened Amethyst in Mayfair in 2022, which also shut its doors a year later. Following the closure, Scotto stepped back from the industry, stating that he would take time to consider opportunities that align with his passion for fine dining. 

The announcement of BEAR comes alongside plans for another restaurant, OAK by chef Chris Emery, scheduled to open at the Crazy Bear Hotel in Stadhampton in January 2025.

Developed by managing director Tom Etridge and Emery, OAK will feature 42 covers and focus on “ingredient-led” British dishes. Menu highlights include Steamed Brill with Scallop, Fennel, Celeriac, and Green Curry Sauce, as well as Cured Salmon with Burnt Cucumber, Nori, and Lettuce Purée. 

Emery brings extensive experience, having worked at prestigious establishments like the three Michelin-starred Waterside Inn in Bray and Jason Atherton’s Pollen Street Social.

Emery shared that OAK’s menu and design aim to be guided by the seasons. 

This announcement follows the Crazy Bear Group’s recent efforts to secure new investment for expansion.

Working with Savills, the Group is seeking long-term financing to evolve its offerings and grow its portfolio.  

Crazy Bear Stadhampton, the brand’s first property, opened in 1993. The hotel, housed in a restored 16th-century coaching inn, features 23 uniquely designed bedrooms, a bar, an external terrace, and event spaces accommodating up to 250 guests.

The venue also offers parking for 100 cars, making it a versatile destination.
